Kale does not get any respect in the vegetable world. Every time I buy it, I'm surprised by how inexpensive it is. Well it is probably one of the best vegetables you can include in your diet. It is easy to grow and can grow in colder temperatures where a light frost will produce sweet kale leaves. Kale is high in vitamin K, A, and C (an antioxidant). It also contains manganese, copper, calcium, potassium and iron. kale should be wrapped in a damp paper towel, placed in a plastic bag and stored in the fridge. The longer it is stored the more bitter the flavor becomes.
Kale is a great base for making a 'hot salad'. Basically a salad that contains vegetables which are lightly sauteed. Then I add chicken, fish, ground turkey or tofu. The vegetables for this hot salad were of course kale, brussel sprouts and tomato chunks (technically a fruit). I sauteed these in sesame oil and lemon juice, added salt and pepper. Then added slivers of almonds and pecan pieces. I had made some ground turkey (cooked with salsa and a can of tomatoes) the night before so I topped the hot salad with the ground turkey. The dish was so moist that it really didn't need any salad dressing.
