I think the word tofu scares a lot of people. I have probably talked about tofu in some form or other. You can pretty much mix it with anything and it will take the taste of the other ingredients. Look for hard or firm tofu in the produce section of the grocery store.
For this specific dish, I peeled an eggplant and sliced it thin. I added a can of diced tomatoes to a tablespoon of sesame oil in a pan, then added the eggplant slices. When the eggplant is cooked, it becomes very soft. At this point, I added 1/2 tbsp of turmeric, 1/2 tbsp of cumin, and 1/2 tbsp of paprika.
To the mixture, I added half cup of celery slices and a mix of bok choy stalk and leaves. I also added some fresh pineapple chunks and finally the tofu. Then let the whole thing simmer for about 15 minutes. That's it!
You can add ANY kind of veggie you want. Tofu is very forgiving and plays nice with other veggies!!
