Have You Tried a Jicama Lately?

A Jicama is a sweet root vegetable that looks like a turnip.  It grows on a vine and is an edible tuberous root.  The root's skin is yellow and papery and the flesh is white,crisp and slightly sweet.  Its texture resembles a raw potato or a pear.  It is high in dietary fiber but has trace amounts of lipids and proteins.


Each cup has about 50 calories and 11 grams of carbohydrates of which 6 grams are dietary fiber.  I love to cut it into smaller pieces and add lime juice, salt and pepper and eat it as a snack.  You can find it in the produce section, and it keeps in the fridge for several weeks.
