Adas Polo- Lentils in Rice and I Added Ground Turkey




I'm from Iran and Iranians love rice.  No, they LOVE rice.  Pretty much every dish is either on, in, or accompanied by rice.  This is not the Uncle Ben quick fix 90 second rice.  Oh no.  It has to be Basmati rice which is a type of white rice that cooks in about 20 minutes.  If you want to cook this type of rice, all you do is bring it to a boil in water, until it is al dente (firm but not hard).  Then rinse.  After rinsing you should put it back in the pot with a little olive oil or butter and let it simmer for a only a few minutes.  You can serve it with cinnamon on top, or just have it by itself.

This is where the lentils come in.  Adas polo literally means lentils and rice (adas 'lentils', polo 'rice').  Lentils are legumes which cook very fast.  In contrast to other legumes which can take over a couple of hours to cook, lentils will cook or perhaps overcook in 20 minutes or so.  I typically purchase my lentils at HEB.  At home I wash them because sometimes they can have rocks in the bag!! So please wash, if you don't want to break a tooth.  Bring them to a gentle boil and let the whole thing simmer for about 15 to 20 minutes.  Cook the rice separately.  Then simply mix the two in layers... in a pot, put a layer of rice, followed by a layer of lentils and so on.  Let the mix cook on very low heat for about 10 to 15 minutes.  Add a tiny bit of saffron to the top.  You will know what tiny means when you purchase saffron, as the real thing is quite expensive.

You can obviously adjust the amount of rice, as you probably should if you want to limit your carbs since lentils contain carbohydrates as well.  However, add as much meat to the dish as you want.  I usually cook ground turkey and then add it to the lentil/rice dish.  Lentils are very high in fiber and contain protein.  The best part is  that they cook so darn fast.  The dish is absolutely delicious.  I am trying very hard to stay away from the word 'delish'.  Who coined this word anyway?  Terrible spelling.
