The Salad- Always the Side Dish

I went to a fabulous dinner party last night. The salad was delicious consisting of spring mix, carrot shavings and mandarins orange. The filet mignon was one of the best I have ever had; flavorful, juicy medium rare. The green beans were not soggy but crisp and were served with dried cranberries. But here is my disappointment and it is not just this specific dinner but our culture of how we view a salad. It is and has been a 'side dish' and no more. The salad plate is usually very small and pretty much consists of perhaps four bites. It is to tell our gastrointestinal system that more food is about to come and not all of it may be healthy. It is a signal for the hunger center in our hypothalamus that it should get warmed up for bread and potatoes and of 6 oz or more of meat.

The appetizers last night consisted of good cheese, different types of mini tarts, and other stuff I didn't have a chance to look at. Can you guess what was the least touched item? If you thought fruit, you're right. Plenty of apple slices, grapes, tomatoes, fresh blackberries and strawberries were there to be had. Most guests went for the bready stuff. There was a lot of fruit left hours later.

Thought for the day: let's increase the size of our salad, God forbid! Make it the main dish with some meat on the side, gasp!
