Hi guys! My posts are becoming rarer and rarer!! Well I started teaching at Baylor and have been pretty busy but I really enjoy it. Anyway, I am planning in the coming year to commit to one post a week. This week I want to tell you how to make the best cranberry (jelly, jam, chutney, whatever you want to call it) and a short amount of time. Its uses are many: you can spread it on crackers, put in your plain non-fat yogurt, add it to your salad or use it as a sandwich spread. It's so easy to make; I'm embarrassed to share the recipe. Anyway, take two packages of cranberries and 1-2 cups of water. Bring the cranberries to a boil and let it simmer until most cranberries have softened and popped. Then add 1/4 cup of Guar Gum (a thickener you can buy at health food stores such as Drug Emporium)- basic flour may also do the job. Once you add the Guar gum the whole mixture starts to thicken within a few moments. Add 1/2 cup of Splenda and you are done. For best results, refrigerate before enjoying. This Jelly or spread has a lot of antioxidants and numerous vitamins. Try it, it only takes a few minutes.
