Gluten?? What is it?

First let's clear something up.  Gluten is the natural protein found in wheat, and therefore any food stuff that comes from wheat.  So don't think that some genius has  come up with a new invention when a rice package says 'gluten-free'.  Of course it's gluten-free; it's rice not wheat so it won't have wheat's protein.  A group of experts from around the world is  trying to clarify the ambiguities related to gluten and who shouldn't eat it.  Because confusion about gluten has been rampant in the last several years and even some folks think that they will lose weight by not eating it.  They may lose weight this way but not because they are limiting gluten but because they may  be severely limiting their wheat intake.

In this post I am going to present a few major groups.  The first group of people are those who are allergic to gluten  but do not have celiac disease.  Wheat allergies affect 1% of children and mot outgrow it.  This is a true allergy therefore the symptoms can include hives, nasal and chest congestion, nausea and vomiting.  These children should avoid wheat products.    The other major group of gluten-related ailments is gluten sensitivity.  The symptoms are similar to celiac disease, however the prevalent is unknown.  This group should also avoid gluten but small amounts may not cause problems.  A third group may have celiac disease.  This group makes antibodies to gluten that can damage the intestinal villi (finger-like projections that help absorb food in the gut).  Symptoms are abdominal pain, bloating, diarrhea and fatigue.  Prevalence in the adult population is 1% and has increased fourfold in the last 50 years.  Strict gluten-free diet should be followed that can reverse the symptoms.

Doctors suggest patients be tested for antibodies if they suspect they have celiac disease before they go on a celiac-free diet on their own.
