A Persian 'Khoresht' Recipe
Many of the Iranian recipes are very healthy as they typically contain a mixture of lean stew meat, vegetables and legumes. The meaning of the traditional 'khoresht' is lost in translation and the closest word in English for it is stew. I absolutely love this specific khorest (khoresthe loobia- green bean stew). Iranians, usually after they cook the ingredients separately, they then let the whole thing simmer for a little while (30 min or so) for the entire flavor to settle and become even more delicious.
You will need: 1 lb of green beans- buy them fresh, then wash them of course and cut them into one-inch pieces. You will also need one package of lean stew meat, one onion, one can of diced tomatoes and one can of tomatoe sauce.
Mince the onion and cook it with the meat in olive oil. Then add the cut green beans, the cans of diced tomatoes and tomatoe sauce. Add to the mixture 1 tablespoon of turmeric, a dash of curry and salt and pepper to taste. Let this mizxture simmer for about 30 to 45 minutes. And you are done. If you want to freeze some back it's even more delicious for left overs.
As I mentioned you can serve it over rice. Or my favorite presentation is to serve it on a big fresh leaf of red cabbage.

Sometimes it's really difficult to get motivated... yes even for me! It's 6:30 am on Sunday and I have had my coffee and a little of my low carb, high protein bread. Now it's time to get on my spin bike for about an hour before I go to the gym to lift with my friend. But inertia is working against me this morning. My body is enjoying just sitting on the couch with my feet up and the only activity that's going on is my fingers moving on the keyboard. I pull the laptop closer to get a little more comfortable when I knock over my coffee cup and the coffee gets all over the carpet that was steam cleaned not too long ago. Well, that got my adrenaline going. I gotta clean up and might as well just get on the $#&* bike.
Once I got to the gym and started lifting the cobwebs of early morning were long gone. I like to do chinups/pullups 2-3 days a week. One of those days I mix them with lower body compound moves such as one-legged squats and lunges. I also did leg extensions and leg curls. The Elite rings are fantastic for doing pushups and planks. Basically all exercises on these rings will also engage your core.
