Tuna-kidney bean-squash dish |
Tuna can be boring. So I like to mix and match it with all kinds of different foods, flavors and textures. One of my favorites is a tuna-kidney bean-squash dish. I like it to wrap it in a cabbage leaf. So here is what you need.
1 Can albacore tuna
1/2 cup of kidney beans or black beans drained and rinsed1 yellow squash diced and steamed
2 tbsp of lite or low calorie sour cream
1 tbsp of lime juice
1 tsp each of paprika and chipotle pepper
Mix and wrap some in a soft cabbage leaf. Of course you can put this on a bed of spinach or have it with a couple of cups of steamed broccoli. All these choices are healthy and low in calories. Enjoy
