Stuffed Bell Pepper- Ready in Minutes



This is a great way to fill up on some protein and have a bell pepper all in one meal!  I opened up a bell pepper from the top and emptied the seeds out, then I filled it with Boca Ground Crumbles (soy based) and added a few sliced radishes to the top.  Warmed it up in the microwave for about 1 minute.  Absolutely delicious and a great snack which provides 13 grams of protein per serving.



You can stuff bell peppers with any ingredients you prefer.  A mixture of lentils and brown rice works really well.  Also ground turkey and black beans are a very good alternative to soy as well.
